Second Saturday of each month.

SHELTER CHICKEN CASSEROLE
Double recipe

3+/- lbs chicken drum sticks and thighs
2 cans condensed mushroom soup
2 ½ cups water
1 envelope dry onion soup mix (1/2 cup)
1 ½ cups uncooked rice

Spray a large disposable aluminum pan with Pam. Place rice,
water, condensed soup in the bottom of a pan. Arrange the
chicken and top with ½ of the dry soup. Salt and Pepper to
taste. Top with remaining onion soup mix. Cover with foil and
bake @ 325º for 1 ½ hours. Baking time may vary. Chicken
should shrink off the bone and rice should be tender.

Note: Large aluminum pans can buckle Place a cookie sheet
underneath to bake and have a sturdy box handy to transport
the casserole.

Note also: Sever drum sticks from second joints if bought in
one piece. Each guest will then get one piece of chicken.
Servers can offer seconds if there is plenty of chicken.

Deliver the casserole to the Shelter around 6 p.m. Earlier if
that works for you. Someone should be there.

¾ cup uncooked rice

Chicken quantity can vary, depending on size of
packaging that is chosen.

Note also: Aluminum pans are available in the church's
auditorium closet. Servers, please try to bring them
back for reuse.
